One of the leading producers in Mécon is Domaine Merlin. Olivier Merlin set up Domaine Merlin in the village of La Roche-Vineuse in Macon in 1987, together with his wife Corinne.

"One of the leading producers in Mécon is Domaine Merlin. Olivier Merlin set up Domaine Merlin in the village of La Roche-Vineuse in Macon in 1987, together with his wife Corinne. Today it is the sons Théo and Paul Merlin who are responsible for the production. The young brothers have a traditional approach in the vineyard and cellar, with a clear understanding of the location of the different vineyards. They use no sprays in the vineyard and the grapes are harvested by hand to preserve whole grape classes, which are pressed slowly and gently to preserve freshness and elegance. Fermentation and storage takes place in French oak barrels. The amount of new oak has been somewhat reduced since they took over from their father in 2017, and is now between 10 and 15 percent."
